4/5 Vegetarian Beef and Noodles
I honestly was not expecting much from this recipe, but I was pleasantly surprised! It gives comfort food vibes without a lot of time and effort. We served it with rolls and used all of the leftovers for lunches at work. This recipe would easily feed a family of four and the ingredients are easily obtained. I did take a point off the score because the vegetarian Worcestershire sauce has to be ordered online, but don’t worry, it’s on Amazon. As always this is the vegetarian version of this recipe. Ingredients:
2 cups uncooked egg noodles (16oz)
1 package Impossible Ground Beef
1 tbsp jar-lic (or 3 cloves of fresh garlic)
¼ cup of butter
1 tsp paprika
¼ cup flour
2 ½ cups broth (vegetable broth or Better than Bouillon No Beef Base)
1 tbsp vegetarian Worcestershire sauce (see notes)
1 tsp thyme (fresh or dried)
½ cup heavy cream
salt and pepper to taste
Instructions:
cook the noodles according to package instructions then drain and set aside.
While the noodles are cooking, cook the ground beef in a large skillet until browned. Add the garlic and mix well, cook for another 30-60 seconds. Empty the garlic beef onto a plate and set aside.
In the same skillet, melt the butter and then add the paprika. Whisk until mixed well and then whisk in the flour.
Whisk in your broth, Worcestershire sauce and thyme. Cook for 1-3 minutes until the sauce thickens.
Whisk in the heavy cream until combined and then add the garlic beef back to the skillet. Mix well so the beef is coated in the sauce. Then add the cooked noodles and gently mix together. Add salt and pepper to taste. Serve warm.
Notes:
Vegetarian Worcestershire can be purchased online if you aren’t able to find it in your local grocery store. I will link the one I purchased here.
You will need a large skillet or large sauce pan for this recipe, please do not try to use a small pan.
We topped this with mozzarella shredded cheese we had leftover in the fridge and it was delightful. Highly recommend a shredded cheese of your choice for serving.
