5/5 Caprese Chick’n Pasta Skillet

This is one-pan-wonder recipe that takes about 30 minutes and yields four servings. The ingredients consist of staple and easily attainable items. We have made this a couple times, it’s one of my husband’s favorites. As always, this is a vegetarian recipe, but you can click here for the original recipe and nutritional information.

Ingredients

1 bag Gardein Chick’n strips

8oz of your favorite pasta

1 cup halved cherry tomatoes

1 cup fresh mozzarella balls

¼ cup chopped fresh basil

2 tsp jar-lic (or 2 minced garlic cloves)

2 tbsp olive oil

salt and pepper to taste

balsamic glaze for garnish

Instructions

  1. Cook the pasta according to package instructions and then drain and set aside.

  2. While the pasta is cooking, heat the olive oil over medium heat in a large skillet then add the Gardein Chick’n strips and cook according to package instructions.

  3. Add the garlic and mix with the chicken. Cook an additional 30-60 seconds and then add the tomatoes. Continue to cook until tomatoes are softened.

  4. Add the cooked pasta and basil to the skillet and mix well.

  5. Drop the mozzarella balls randomly throughout the skillet and let them heat until slightly melted.

  6. Serve warm with a balsamic glaze drizzle.

Notes

  • You can serve this alone, but if you are looking to stretch the meal a bit, garlic bread is a delicious side dish to pair with this pasta.

  • This recipe reheats very well so if you are looking for leftovers, double the recipe and use a sauce pan instead of a traditional skillet.
