5/5 Eggs in Purgatory

This recipe is a mix of staple and attainable ingredients, and it took a little less than 30 minutes to make. I highly recommend this recipe as an easy weeknight dinner!

Since this recipe is already vegetarian I didn’t have to make any changes. I serve this with a side of sliced bread, which we use as a vessel for shoving this delightful meal in our mouths, and a little bit of shredded parmesan cheese on top. Ingredients

  • 3 tablespoons olive oil

  • 1 small yellow onion (chopped)

  • 3 cloves of garlic (minced)

  • 1/2 teaspoon red pepper flakes

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 28oz canned diced tomatoes

  • 2 cups fresh baby spinach

  • 3oz mozzarella cheese

  • 4 large eggs

  • shredded parmesan cheese for garnish

  • bread slices for serving (toasted or untoasted)

Note: I bought the pre-chopped onion from HEB and used jar-lic instead of fresh cloves. For the mozzarella cheese I bought the mozzarella balls from HEB so it was less work and easier to drop in the pan.

Instructions

  1. Get out your large skillet or saucepan and start heating the olive oil over medium heat. Add your chopped onion and sauté for 3-4 minutes until it becomes translucent then add the garlic and sauté until fragrant.

  2. Add in all of the seasonings and cook until fragrant (about 30 seconds).

  3. Pour in the tomatoes (do not drain the liquid) and turn the heat down to medium-low. Let this simmer, uncovered, until it thickens (about 10 minutes). Then stir in your spinach.

  4. Drop in the mozzarella pieces/balls throughout the pan and then use a spoon to create 4 depressions for your eggs.

  5. Gently crack 1 egg into each depression and season with salt and pepper. For a runny yolk (recommended) cover the pan and cook for 3-5 minutes. For a firmer yolk cook another 2-3 minutes.

  6. When the eggs are cooked, garnish with parmesan cheese and serve with bread slices. Enjoy!
