Vegetarian Taco “Meat”

Tacos are a staple in Texas, but it can be harder for vegetarians to partake since most places don’t offer a (satisfactory) vegetarian option. My husband came up with recipe and I want to share it with you because it really is the closest thing to real taco meat you can get! It makes a large portion - enough to feed us tacos for days - plus it’s fast and easy. Use this recipe to enjoy vegetarian taco nights in the comfort of your own home! Ingredients

16oz sliced mushrooms

1 package Impossible Ground Beef

1/4 cup water

1/2tsp salt

1 tbsp any oil (we suggest either olive or avocado - strictly for taste)

1/4 cup vinegar-based hot sauce

1tsp cumin


Instructions

1.) Grab a large skillet and add the mushrooms, water and salt. Cook on high until all water is cooked out, stirring occasionally.

2.) Add the oil to the skillet and fry off the mushrooms until browned.

3.) Turn the heat down to medium. Now add the Impossible Ground Beef and cook until browned through then add the cumin and hot sauce, stir to combine.

4.) Serve and enjoy!


Notes:

  • There are other ground beef substitutions available so feel free to use whichever one you like best.

  • This does have a mild level of spice, but you can change that with the amount of hot sauce you add. If you want more spice, add more hot sauce. If you want less spice, add less hot sauce.

  • Highly recommend the HEB butter tortillas for serving!
