5/5 Meatball Garlic Bombs
I took this recipe and simplified it to make an easy weeknight meal. If you would like to make each component from scratch, please check out the original recipe here. As always, this is the vegetarian version, but feel free to use real meatballs if you wish.
Ingredients
1 bag Gardein meatless meatballs
12 dinner rolls (I used King’s Hawaiian Rolls)
2 cups shredded mozzarella cheese
1 teaspoon italian seasoning
cooking spray
5 tablespoons garlic butter (I used the garlic butter dollops from H-E-B)
1 jar marinara sauce (you will have some of this left over)
Instructions
Cook the meatballs according to package instructions.
While the meatballs are cooking, start prepping the rolls. Cut out a circle from each roll about halfway down without puncturing the bottom. Make sure the hole is big enough to fit a meatball.
Place the rolls in a greased 9×13 pan and preheat the oven to 350 degrees.
Melt the garlic butter and use a pastry brush to coat the top of the rolls and inside the holes equally.
Put about 1 tablespoon of marinara sauce into each roll.
Once the meatballs are cooked, add one cooked meatball to each dinner roll and then top with another tablespoon of marinara sauce.
Spread the mozzarella over the top of the rolls and then sprinkle with the italian seasoning.
Bake in the oven for 10-12 minutes until the cheese is melted. Broil for a few minutes at the end if you want to brown and crisp the cheese.
Cut the rolls apart and serve warm
The only note I have for this recipe is that the simplicity of it makes it easy to customize. Feel free to add or subtract ingredients according to your tastes, you can’t really mess this one up. Let me know if you try this recipe and what your thoughts are!
