Vegetarian Copycat KFC Bowls

I always loved the KFC bowls, but after becoming a pescatarian it was no longer an option. Now I make it at home with vegetarian meat replacement products and it’s one of my favorite meals! It’s a quick and easy recipe with easily attainable ingredients. Remember you can change this up however you want and still get an amazing result.

Ingredients

1 bag frozen corn

4 russet potatoes

1 stick of butter

1 cup of heavy whipping cream (you may not use all of this)

1 bag Gardein Chick’n nuggets

your favorite shredded cheese (for garnish)

your favorite BBQ sauce (for garnish)

salt and pepper to taste

Instructions

  1. Wash the potatoes and then cube them into roughly equal size. Add all of the potatoes into a pot and fill with water, just covering the potatoes. Place on high heat. When the water begins boiling, set a timer for 10 minutes. Don’t forget to salt your water!

  2. While the potatoes are boiling, cook the nuggets according to package instructions. I recommend air frying them, but they are just as good when baked in the oven. Microwave your corn according to package instructions.

  3. Take a break, now you’re just waiting for everything to be done. Stir the potatoes occasionally though, keep them guessing.

  4. When the potato timer is up, turn off the heat and drain the potatoes. Put them back in the pot and add the stick of butter. Use a masher to smash the potatoes with the butter and mix everything together. Add about half of the cream and stir. Check the consistency and add more cream if you desire. Don’t add more than a cup or you’ll have potato soup. Add salt and pepper to taste.

  5. After the nuggets and corn are done, you’re ready to assemble your bowl. Add the mashed potatoes, corn and nuggets then garnish with shredded cheese and your favorite BBQ sauce.

  6. Enjoy!

Notes:

  • This makes about 4 servings

  • if you are not vegetarian, substitute real chicken nuggets for the vegetarian ones

  • if you don’t like a rustic mashed potato, peel your potatoes after washing them and use an immersion blender to mix everything at the end

  • to make this meal even easier, use boxed/bagged mashed potatoes
