Honey Garlic Vegetarian Meatballs
I was skeptical of this recipe at first because I wasn’t sure what it would actually taste like. The picture kept catching my eye while scrolling Pinterest though, so I finally decided to try it. My husband and I were both pleasantly surprised! The prevailing flavor is actually the meatballs with garlic following close behind. The honey adds a bit of sweetness, but it’s not one of the forward flavors. Using frozen meatballs simplifies this recipe immensely, making it the perfect weeknight meal. Ingredients
1 bag Gardein vegetarian meatballs
¼ cup honey
¼ cup soy sauce
1 tbsp jar-lic (or 3 cloves minced)
1 tsp corn starch mixed with 2 tbsp of water
Instructions
Cook the meatballs according to package instructions.
While those are cooking, start on the glaze. Add your jar-lic to a medium-sized skillet on medium heat and saute for about 30 seconds or until fragrant.
Stir in the honey and soy sauce, bringing to a simmer.
Add the corn starch slurry and stir. Cook for another 2-3 minutes until the glaze thickens.
Add the cooked meatballs and stir to ensure each meatball is coated.
Serve and enjoy!
Notes
We served this with mashed potatoes (see recipe here), but roasted vegetables, rice or buttered noodles would also be great options
substitute the honey for hot honey if you want a little kick of spice
When making the glaze, you may question if there is actually enough of it to coat your meatballs. I promise you, there is. If you want extra glaze for serving, I would double the recipe - if you do this, double the slurry, but don’t add all of it right away. Add the slurry in small amounts until the glaze reaches your desired consistency.
